Thomas Vermeersch
Head Chef & Founder · trained in Lyon
Thomas grew up in a Ghent family where the Sunday meal was sacred. At eighteen he left for Lyon to learn cooking from the masters of classic French cuisine. Five years he worked in starred restaurants before returning to the Netherlands.
Together with his wife Elise he opened La Maison in Amsterdam in 2015. His philosophy: simplicity is the highest level of refinement. No unnecessary frills — only the finest produce, the right technique and genuine hospitality.
